Homemade Hot Pocket dough
A tried-and-true Homemade Hot Pocket dough that is sure to please!
To this day, I don’t think any of our boys have had a store-bought hot pocket. This is true even for our earlier, not so clean eating days. It was not just something I bought. Now, Justin and I are 80’s kids and hot pockets were a staple. How could I deprive my children of this nostalgic, warm and goey microwaveable “food like” food? My way of creating food that our boys will enjoy and actually eat always stems down to what is the “kid food” that is marketed in our society. What do they see their friends eating at school that they want to try? Now, by this point our boys know that all packaged food is toxic and full of chemicals meant to make us sick. They don’t even ask for these things….but what if I could make a healthier, homemade version? This is where I get a lot of my inspiration.
This dough is so dang easy and has just a few ingredients that even the mama (or daddy) that doesn’t cook from scratch will probably have.
I have also played around with different fillings for this dough. I have made pizza pockets, taco pockets, ham and cheese, and brisket and cheese hot pockets. I bet a breakfast one would be delicious too!
Ingredients:
6 cups AP flour
2 tsp salt
4 TBSP olive oil
2 cups HOT water (it has to be HOT)
Directions:
Mix salt and flour together in a large bowl
Add in your olive oil and mix
Slowly mix in your HOT water. You can always add a little more if your dough seems dry.
Flour your surface and knead. Then form it into a ball and let it rest for about 30 minutes.
Once that dough has rested, roll it out into a semi thin layer. You are now going to cut out your pockets or disks. I use a wide mouth mason jar ring.
Once all your discs are formed you can start to fill them with whatever you choose!
You can either fry these in tallow, coconut oil or whatever you like. You can also bake these at 350 until golden brown. If you bake them, I would do a slight egg wash.
