Enchilada Pasta

Ingredients for Enchilada Pasta

Now ya’ll know I am not one that measures everything, and we buy in bulk, but I will try and break it down so that you get the same result.

1 pound ground beef

taco seasoning

1 family size can enchilada sauce

1 small can Rotel

1 quart broth

1 family size box of pasta (we like the spirals for this recipe, but use what you have!)

1/2 cup sour cream (optional but makes it creamy)

1 cup cheddar cheese

green onions

Directions for Enchilada Pasta

In a large Dutch oven (you will need a lid) brown your ground beef and add your taco seasoning.

After meat is browned and seasoned, add your enchilada sauce, Rotel, and broth. Mix this well to incorporate.

Then you will add in your sour cream and bring to a slight boil

Once the sour cream is well incorporated, add in your pasta and cheddar cheese. Turn your heat down to low and cover until the pasta is cooked. This will take about 8-10 minutes.

Once your enchilada pasta is cooked dice up green onions and mix.

Optional Toppings for Enchilada Pasta

Like I always say, our boys are boring with food, but toppings would be a great addition!

You could add an additional dollop of sour cream, jalapenos, red onions, or cilantro. Really anything you would top a taco with.
