Cinnamon Applesauce Muffins

Cinnamon applesauce muffins are a great sweet treat for your kiddos. They are moist and not overly sweet. The chia seeds are not necessary but are a great source of fiber, omega-3 fatty acids, protein, essential minerals, and antioxidants. Your kiddos won’t even know they are there!

Ingredients for Cinnamon Applesauce Muffins:

  • 1 1/2 Cup rolled oats
  • 1 1/2 Cup all purpose flour
  • 3/4 Cup brown sugar
  • 1 tsp baking powder
  • 3/4 tsp baking soda
  • cinnamon to taste
  • 1 TBSP chia seeds
  • 1/2 tsp salt
  • 1 1/2 Cup unsweetened applesause
  • 3/4 Cup milk
  • 1/4 Cup melted butter
  • splash of vanilla extract
  • 1 egg

Instructions for Cinnamon Applesauce Muffins:

Preheat oven to 375 degrees

  • In a large mixing bowl, mix all dry ingredients together.
  • In a separated bowl combine all wet ingredients.
  • Pour wet ingredients into dry ingredients and combine well so there are no chunks.
  • Place muffin liners in your muffin tin and spoon in mixture, about 1/4 cup per liner.
  • Place in oven and bake for 16-20 minutes. Do not over bake, they will become dry

This recipe yields approximately 16 muffins.
